Our premium quality starts with handpicked USDA Prime, USDA Choice, and All-Natural cuts of Filet Mignon that are sourced from native Mid-Western grain fed Angus, Hereford and Wagyu cattle to ensure premium quality and flavor with each bite.

USDA Prime is the highest grade given to beef. Steaks labeled USDA Prime are the best of the best as only 2-3% of all beef that come to market receive a USDA Prime grade. If you are looking for the absolute best quality you cannot go wrong purchasing our USDA Prime Filet Mignons! However, do not forget about our selection of USDA Choice steaks, not everybody can be in the top 98th percentile!! At Filetmignons.com we hand select our USDA Choice Filet Mignons from the upper 2/3rd of the USDA choice grading scale to ensure ideal marbling and delicious flavor every time! Remember to always look for the USDA shield of authenticity as only USDA inspected beef can carry this coveted shield.

Aging is a change that occurs in steaks slowly as natural enzymes break down proteins and muscle fibers that heightens flavor and tenderizes meat. All of FiletMignons.com steaks are “ wet aged” for 21-28 days in Cryovac vacuum sealed packages that sit in highly monitored humidity and temperature controlled coolers. The exceptional care put into properly aging our filet mignons helps ensure that we provide the most tender and juicy steaks in the market place.

Marbling is the visible flecks of fat within the steak. Marbling is found within the muscles of the steak and is directly related to the palpability or flavor and juiciness of cooked steak. Marbling produces a multitude of flavor compounds that are released when cooking the steak, adding to the tenderness and increasing the juiciness that we all crave. Filetmignons.com hand selects all of our steaks to ensure abundant marbling and succulent taste!

If you elect to not prepare your recently purchased Filet Mignons upon receipt they should be promptly stored in your freezer. We suggest that you do not store the steak boxes for longer than five months to ensure that when you do decide to prepare them they will be as tender and juicy as the day they were cut. Steaks can be stored in the freezer for longer periods of time and generally retain their tender flavor. However, varying freezer temperatures and humidity levels can cause freezer burn and affect the level of taste and quality.

It is important to use proper care when thawing your frozen filet mignons to ensure safety and preserve quality. FiletMignons.com highly encourages you to thaw your filet mignons slowly in the refrigerator for approximately 12 – 24 hours. When thawing, the steaks should be left in their packaging and placed on a plate or dish on the bottom of the refrigerator to prevent any juices from dripping on other items already placed in your refrigerator.

All Filet Mignons should either be grilled or broiled at high heats. However, prior to sticking your premium Filet Mignon on the grill or in the broiler it is critical that you sear it first. We highly recommend searing your steaks in a cast-iron sauté pan on the stovetop. Searing the filets until they are well caramelized in the sauté pan will help create a crisp outer crust, tender inside, and most importantly lock in the juices to ensure great flavor.

Properly determining if your Filet Mignons are cooked to you or your guests liking is critical in cooking a great steak. The most common error made when preparing a steak is piercing or cutting into the steak to determine doneness. It is critical that you do not do this as it will let out all of the flavorful juices in the steak. To properly determine if your Filet Mignon is cooked properly you can either use the touch method or a meat thermometer. We suggest using a meat thermometer as it will read the exact temperature of the meat and allow you to determine doneness consistently. Use the following temperatures as guide for doneness Medium Rare – 145 Degrees Fahrenheit, Medium – 155 Degrees Fahrenheit, Well Done – 160 Degrees Fahrenheit.
